Excessive consumption of foods high in saturated and trans fat has been associated with the
incidence of overweight and obesity, which in turn are associated with health problems such as
dyslipidemia. The aim of the present study was to investigate the biochemical, cognitive and
morphological effects of the high-fat diet. Twenty BALB/c mice were divided into two groups: control
and treatment. For 7 weeks a pellet-based diet was administered to the control group while the
experimental group was administered a HFD.
Two bromatological tests were performed on the diet, as well as biochemical and cognitive
tests on the rodents. After 7 weeks of treatment, the mice were sacrificed for subsequent
morphological analysis of the heart, kidney, liver, adipose tissue and pancreas. In the liver, larger
nuclei were found as well as increased spaces for the formation of fat around the cytoplasm, in the
kidneys compact glomeruli were found and therefore infiltration within the glomeruli.
There was no difference between the other tissues, all showed similarities between the control
group and the treated group, as well as no significant differences between the biochemical analyses.
