Kefir is a fermented milk beverage with multifunctional bioactivity, tested in different environmental and population conditions; benefits have been attributed, especially biochemicals; But what other benefit can be contributed? Objective: To evaluate the effect of the consumption of artisan kefir on , biochemical parameters in healthy individuals. Material and Methods: Pilot study with convenience sampling. The 30 participants consumed daily 250 mL of artisan kefir, previously standardized and analyzed bromatologically and micriobiologically for 4 weeks, evaluations were carried out at the beginning and at the end of the study. Biochemicals: fasting glucose, triglycerides, total cholesterol and HDL cholesterol, (JENWAY UV spectrophotometer). The statistical package SPSS version 20 was used. Results: significant increase in CHT (16.6 mg / dL) and HDL-C (10.6 mg / dL), decrease in triglycerides (27.7 mg / dL), (Figure 1). Conclusions: The consumption of artisan kefir can act on the lipid profile, significantly improves gastrointestinal well-being. The above suggests that this functional food can be included in the usual diet of healthy individuals and improve health
